Velveeta goes back to the early 1920s in Monroe, NY. The Monroe Cheese Co. developed it, selling the name for peanuts to Kraft by 1928. A processed cheese product, velvety smooth (and saltier) than other cheeses. Today, it sells for nearly $5 a pound, whether block, sliced or made like Cheez Whiz.
