I remember a Scott us on East Broadway in Louisville Ky. In the 70's. They had the best hot ham and swiss. I always thought their method was interesting. They had a stainless steel table with what looked like nails but we're heating rods. They would take the sandwiches ( roast beef also) they had a card board sleeve around the sandwich and wrapped in foil. They'd slide the sandwich over the heating rod to warm the sandwiches. .was my favorite til it closed
