You can make a home version of Heydays and they’re really great, because you control the quality of the ingredients! All you need is chocolate, caramel, peanuts and oblatne, which is unadorned wafer cookie in sheet form. We are lucky to have a European grocery store, where I buy oblatne in person, but you can order it online, if it’s not available where you live. (Google “oblatne” and several sources will pop up.) That’s better than buying frosting-filled wafer cookies, which you have to open to scrape out that filling. The sheets are also faster and easier to use. I melt Werther’s caramels for the filling and I use premium chocolate to coat the top. Then. I sprinkle the top with chopped peanuts. (The next batch will be with chopped almond bits, because I really prefer almonds to peanuts) They are easy to make, because all the work is simply and carefully melting two ingredients (the caramel and the chocolate), chopping nuts, and assembly. When cool, cut the sheets into single-serving-size bars and eat! Yum!
