My mom (who grew up in Iowa) made us bean soup from Hallmark beans. It was a family favorite. I think she used the recipe on the box, but modified it some. Here is her recipe. The notes in () are her notes. The notes in [] are my clarifications. Enjoy! Hallmark Bean Soup Recipe 1 Box Hallmark Beans (precooked - 9-1/2 oz box) [note: these are no longer available-use dry navy beans] 4 cups water salt To taste (usually takes more than I think! but I start with 1/2 to 1 tsp) Pepper to taste 1 cup or more diced celery (I usually use much more) 2 tbsp Grated or dried onion (according to your tastes) Cover and simmer until tender – 15 to 20 minutes. (Be careful it doesn't boil over at first) [with modern dried beans you might have to cook it for about 4 hours] Meanwhile, chop or slice into bits some bacon - 4 slices or more as desired. Brown in another pan as for regular bacon. Add to bean mixture along with 1 or 2 tbsps of the bacon fat. When beans are soft, add 2 cups milk (whole or 2% or skim) and heat to serving temperature. Actually, we usually liked the soup even better when warmed up for the second round!
