For those of you inquiring about the (dry/boxed) Coconut Pecan Frosting Mix made by Pillsbury. A number of years ago I wrote an inquiry to the Pillsbury company regarding this particular product and expressed my frustration in no longer being able to purchase it off of the shelf. I received this prompt response from Pillsbury: "Do you have a recipe calling for dry coconut pecan frosting mix and found that it is no longer available? Well, no need to fret! Pillsbury has provided this helpful recipe for cooks who still want to use those tasty recipes calling for the mix!" The recipe they sent me is as follows: 1 cup sweetened flaked coconut, 3/4 cup brown sugar firmly packed, 1/2 cup all-purpose flour, 1/2 cup chopped pecans, 3 tablespoons butter or margarine. In a medium bowl, combine coconut, brown sugar, flour and pecans; mix well. Using fork or pastry blender cut in butter or margarine. In the future should you have product concerns of any type, I have found the best course of action is to contact the manufacturer directly. These companies employ a team of helpful staff who are delighted to assist you. I hope this is comment/post will beneficial. As I rarely visit this website...You are welcome!
